Aloo tikki is a snack originating from North India, Pakistani and Bangladeshi preparation, it is made out of boiled potatoes, peas, and various curry spices. "Aloo" means potato, and the word "tikki" means a small cutlet.

Ingredients 3 large potatoes, peeled, boiled and mashed 3/4 cup frozen peas (optional) 1 tsp. chili powder 2 tsp. garam masala 1 tsp. cumin powder 1 tbs. grated ginger 1/2 tsp chaat masala (optional) 1 tbsp coriander leaves, chopped 2 tbs. bread crumbs 4 tbs. rice flour or corn flour Method Pressure cook 3 potatoes till thoroughly cooked and mash then well once cooled. Add the spice powders, salt, corn flour or rice flour and coriander leaves. Mix everything very well. Divide the mixture into small or medium shaped patties. Heat a tawa with little oil and shallow fry the patties till cooked and crispy on both ends. Once done, drain them on paper tissue to remove excess oil and serve hot with corander chutney or tamarind chutney or any sauce of your choice. Note : You can use corn starch, rice flour, bread as a binding agent to keep it's shape. The potato has to be cooled down before adding any binding agent, Otherwise the mixture becomes sticky. If you have leftover bread, soak few slices of bread in water, squeeze out excess water and add to the potatoes. Here bread is added as a binding agent. You can also coat the tikkis with breadcrumbs before frying. This makes the tikki more crisp.
