Green beans may be a particularly helpful food for providing us with the mineral silicon which is very important for bone health.It also contains an impressive list of antioxidant plant pigments thus it can reduce the risk of cancer. The soluble fiber found in beans may help to reduce LDL (“bad”) cholesterol levels too.
So do include this green beans in your diet regularly and here is the customary recipe of beans that’s served with South Indian Meal 🙂
Ingredients:
Onions – 1, finely chopped
Fresh Green Beans – 10 nos diced
Green Chillies – 2
Fresh Ginger – 1 inch
Fresh Coconut – 2 tbsp, grated
Salt – 1 tsp
For Tempering:
Oil – 2 tsp
Dried Red Chilli – 1
Black Mustard Seeds – 1 tsp
Urad Dal – 2 tsp
Method:
Put the oil in a pan over medium heat. When the oil is hot add the dried red chilli, black mustard seeds and urad dal. When the mustard seeds splutter and dal is golden, for about 30 seconds.Add the onions and saute for a minute. Add beans to the pan and stir them into the seasonings. Mix in the green chilies and ginger. Cover and cook over medium heat till the beans are tender. Stir in the coconut and salt and switch off the stove.
