Ingredients:
1 cup mixed vegetables (carrots, beans, potatoes, peas, etc.), chopped
1 onion, thinly sliced
2 green chilies, slit lengthwise
1-inch piece of ginger, grated
4-5 garlic cloves, minced
1 cup thin coconut milk
1/2 cup thick coconut milk
1 teaspoon mustard seeds
2-3 dried red chilies
6-8 curry leaves
2 tablespoons coconut oil
Salt to taste
For the spice paste:
1/2 cup grated coconut
1 teaspoon fennel seeds
1/2 teaspoon turmeric powder
Instructions:
In a small blender or mixer, grind the grated coconut, fennel seeds, and turmeric powder together to make a smooth paste. Set aside.
In a large pot or deep pan, heat coconut oil over medium heat. Add mustard seeds and let them splutter.
Add dried red chilies and curry leaves to the pan. Sauté for a few seconds until aromatic.
Add sliced onions, green chilies, grated ginger, and minced garlic to the pan. Sauté until the onions turn translucent and lightly golden.
Add the chopped mixed vegetables to the pan and stir-fry for a couple of minutes.
Add the thin coconut milk to the pan and bring it to a gentle simmer. Cover the pan and cook the vegetables until they are tender.
Once the vegetables are cooked, add the ground spice paste to the pan. Stir well to combine with the coconut milk and vegetables.
Season with salt to taste and simmer the stew for a few more minutes to allow the flavors to meld together.
Finally, pour in the thick coconut milk and give it a gentle stir. Be careful not to boil the stew after adding the thick coconut milk to prevent curdling.
Remove the pan from heat. Taste and adjust the seasoning if needed.
