_Azee's Secret Pumpkin Soup Recipe_


Ingredients:


- 1 small pumpkin (about 2 lbs)

- 2 tablespoons butter

- 1 onion, chopped

- 3 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon smoked paprika

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 4 cups chicken or vegetable broth

- 1/2 cup heavy cream or coconut cream (optional)


Instructions:


1. Preheat oven to 400°F (200°C).

2. Cut the pumpkin in half lengthwise and scoop out the seeds.

3. Place the pumpkin on a baking sheet, cut side up, and drizzle with butter.

4. Roast the pumpkin in the oven for about 45 minutes, or until the flesh is tender and caramelized.

5. Scoop the flesh out of the pumpkin and puree it in a blender or food processor until smooth.

6. In a large pot, sauté the chopped onion and minced garlic in butter until softened.

7. Add the cumin, smoked paprika, salt, and pepper to the pot and stir for 1 minute.

8. Add the broth to the pot and bring to a boil.

9. Reduce the heat and simmer for 10-15 minutes.

10. Stir in the pureed pumpkin and heavy cream (if using)

11. Taste and adjust the seasoning as needed.

12. Serve hot, garnished with chopped fresh herbs or a sprinkle of paprika.
