Falooda or Faluda is a popular beverage in South Asia made primarily by mixing rose syrup with vermicelli and tapioca seeds along with milk. This chilled drink-dessert is the perfect way to cool off in the summer heat. The seeds used in this falooda form an excellent intestinal cooling agent in the summer season…Especially in cases of hot flushes and heat related disorders.

I love this dessert and we used to engage in this tasty delight frequently to beat the hot humid climate of UAE. This can be easily made at home and hence we can save some pennies as they are mostly expensive to buy it outside…




Ingredients

  • 1 liter chilled unboiled pasteurized milk

  • 1 cup rose syrup

  • 1/2 liter vanilla ice-cream

  • 1 tbsp. falooda seeds (sabja)

  • Mixed fruits cut into tiny bits

  • Jelly (preferably strawberry or raspberry flavor) cut into small bit

  • Falooda Sev (boiled and drained)

For falooda seeds (Sabja):

Soak cleaned seeds in 1/2 liter water for 30 minutes. Drain in colander, chill in refrigerator till required.

To proceed before serving:

1. Beat chilled milk with hand mixie till frothy.

2. Take number of tall glasses to be served.

3. Pour 2 tbsp. of syrup at bottom.

4. Add 2 tbsp. sev. Top with 1 tbsp. seeds.

5. Tilt glass a bit, pour milk to 3/4 level, carefully.

6. Do not disturb the base layers, while pouring.

7. Top with some fruits, nuts & vanilla ice-cream / kesar kulfi

8. Top ice-cream with chopped almonds, cashew nuts and pistachios.
