Ingredients:

- 1 kg chicken, cut into pieces

- 2 onions, finely chopped

- 2 tomatoes, finely chopped

- 3-4 green chilies, slit lengthwise

- 2 tablespoons ginger-garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon mustard seeds

- 1 cinnamon stick

- 2-3 cloves

- 2-3 cardamom pods

- 1 bay leaf

- 1/2 teaspoon turmeric powder

- 1 tablespoon red chili powder

- 1 tablespoon coriander powder

- 1/2 teaspoon garam masala powder

- Salt to taste

- Fresh coriander leaves, chopped (for garnish)

- 2 tablespoons vegetable oil



Instructions:

1. Marinate the Chicken:

- In a large bowl, marinate the chicken pieces with turmeric powder, red chili powder, coriander powder, and salt. Mix well and let it marinate for at least 30 minutes.

2. Prepare the Curry Base:

- Heat vegetable oil in a large skillet or kadai over medium heat.

- Add cumin seeds, mustard seeds, cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté until aromatic.

3. Add Aromatics:

- Add chopped onions and green chilies to the skillet. Sauté until the onions turn golden brown.

4. Cook the Spices:

- Add ginger-garlic paste to the skillet and sauté until the raw smell disappears.

- Add chopped tomatoes and cook until they turn soft and mushy.

5. Simmer the Curry:

- Add the marinated chicken pieces to the skillet and mix well with the onion-tomato mixture.

- Cover and cook the chicken over medium-low heat until it is tender and cooked through, stirring occasionally.

6. Finish with Spices:

- Sprinkle garam masala powder over the chicken curry and mix well.

- Adjust the seasoning according to taste preferences.

7. Garnish and Serve:

- Once the chicken is cooked and the curry reaches the desired consistency, remove from heat.

- Garnish with freshly chopped coriander leaves.

- Serve hot with steamed rice, naan, or parathas.

Tips:

- For a creamier texture, you can add a splash of coconut milk or cream towards the end of cooking.
