MUTTON CURRY

Mutton Curry is an Indian Curry dish rich in spice and aromatic. Thus served with rice and many traditional breads.

Ingredients

  • Mutton – 1 kg

  • Onion(big) – 3 no’s

  • Tomato – 2 no’s

  • Ginger – 1″ piece

  • Garlic pods(small) – 10 no’s

  • Green chilies – 4 no’s

  • Chilly powder – 1 1/2 tsp

  • Coriander powder – 3 tsp

  • Turmeric powder – 1/2 tsp

  • Garam masala – 1/2 tsp

  • Bay leaves – 3 no’s

  • Fennel(Perinjeerakam) – 1 tsp

  • Cloves(Grambu) – 4 no’s

  • Cinnamon(Karugapatta) – 2 sticks

  • Curry leaves – A few

  • Salt – As required

  • Oil – As required


Method

1. Wash mutton well and cut it into small pieces.

2. Heat oil in a pan.

3. Add fennel, cloves, bay leaves & cinnamon and stir well.

4. When fennel becomes slight brown in color, add sliced onions, green chilies and curry leaves.

5. If u have time, u can use small onions (kunjulli) in place of big ones for better taste.

6. When onions turn golden brown, add ginger-garlic paste.

7. Reduce the flame and saute it.

8. Add chilly powder, coriander powder and turmeric powder and stir for 5 mins on medium flame.

9. If u want the mutton curry to be less spicy, reduce chilly powder to 1 tsp and green chilies to 2 nos.

10. Add tomatoes and salt and mix well for 5 mins.

11. Add the garam masala powder.

12. After 3 mins, add the mutton pieces and stir well.

13. Keep it on medium flame for 10 mins.

14. Do not add water at this stage.

15. Stir occasionally to avoid sticking to the bottom of the pan.

16. Transfer the contents into a pressure cooker.

17. Add 6 cups (teacups) of water and cook on medium flame for 20 – 25 mins.

18. Mutton curry is ready.

19. Serve mutton curry hot with ghee rice or parotta or chapati
