Poori Bhaji

Poori is a very popular Indian Deep Fried bread and is made mostly with whole wheat flour and are usually served with a side potato dish, dry or curried. Potatoes and pooris are a made for each other combo. Some Prefer to have pooris with raita or any kurmas tooo. Pooris are also served in the north india with a sweet dish sooji (semolina) halwa and in gujarat and maharashtra with aamras a mango pulp or shrikhand.

Poori Bhajis are mostly a desired weekend breakfast here as we can relish them hot hot at a relaxed pace.

Ok, Now on to the recipe for Poori with Potato Side Dish.



Ingredients:

For Poori:

- 2 cups whole wheat flour

- 1 teaspoon salt

- Water (as needed for dough)

- Oil (for deep frying)

For Bhaji:

- 4 medium-sized potatoes (boiled and mashed)

- 1 onion (finely chopped)

- 2 tomatoes (chopped)

- 2 green chilies (finely chopped)

- 1-inch ginger (grated)

- 2 cloves garlic (minced)

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- Salt (to taste)

- Fresh coriander leaves (for garnish)

- Oil (for cooking)

Instructions:

1. Prepare the Poori Dough:

- In a large mixing bowl, combine whole wheat flour and salt.

- Gradually add water and knead into a smooth, pliable dough.

- Cover the dough and let it rest for 15-20 minutes.

2. Shape and Fry the Pooris:

- Divide the dough into small lemon-sized balls.

- Roll each ball into a small disc (poori) using a rolling pin.

- Heat oil in a deep frying pan over medium-high heat.

- Once the oil is hot, carefully slide the pooris one at a time and fry until they puff up and turn golden brown on both sides.

- Remove the fried pooris using a slotted spoon and place them on a paper towel to drain excess oil.

3. Prepare the Potato Bhaji:

- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and sauté for a few seconds.

- Add chopped onions, green chilies, ginger, and garlic. Sauté until onions turn translucent.

- Add chopped tomatoes and cook until they turn mushy.

- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

- Add boiled and mashed potatoes to the pan and mix until well combined.

- Cook the bhaji on low heat for 5-7 minutes, stirring occasionally, until the flavors meld together.

4. Serve:

- Garnish the bhaji with freshly chopped coriander leaves.

- Serve hot pooris with piping hot potato bhaji.
