Qatayef

Qatayef is a popular dessert during the month of Ramadan. These delicate pancakes are filled with a sweetened cream cheese mixture and drizzled with honey syrup.


These delicate and delicious pancakes filled with a sweetened cream cheese mixture are a must-try during Ramadan. Served with a drizzle of honey syrup, they are a perfect way to end the day. Here's a recipe to make your own Qatayef at home:



Ingredients:

  • 1 cup all-purpose flour

  • 1 teaspoon active dry yeast

  • 1 teaspoon sugar

  • 1/4 teaspoon baking powder

  • 1/2 cup warm water

  • 1/4 cup warm milk

  • 1 tablespoon vegetable oil

  • 1/4 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1 cup cream cheese, softened

  • 1/2 cup powdered sugar

  • 1/4 cup heavy cream

  • 1/4 cup honey

  • 1/4 cup water

  • Chopped pistachios, for garnish (optional)

Instructions:

  1. In a large mixing bowl, combine the flour, yeast, sugar, and baking powder. Add the warm water, milk, vegetable oil, vanilla extract, and salt. Mix until the batter is smooth and no lumps remain.

  2. Cover the bowl with a towel and let the batter rest for 30 minutes to an hour.

  3. While the batter is resting, make the cream cheese filling. In a medium mixing bowl, combine the cream cheese, powdered sugar, and heavy cream. Mix until the filling is smooth and creamy.

  4. In a small saucepan, combine the honey and water. Heat the mixture over low heat, stirring occasionally, until the honey has dissolved completely. Remove the pan from the heat and set it aside.

  5. Preheat a non-stick skillet over medium heat. Using a small ladle or a spoon, pour a small amount of batter onto the skillet to form a small pancake. Cook the pancake until bubbles form on the surface and the edges begin to brown, about 2-3 minutes.

  6. Using a spatula, flip the pancake over and cook for an additional 1-2 minutes on the other side. Remove the pancake from the skillet and repeat with the remaining batter until all the pancakes are cooked.

  7. To assemble the Qatayef, place a small spoonful of the cream cheese filling in the center of each pancake. Fold the pancake in half to form a half-moon shape and pinch the edges together to seal.

  8. Arrange the Qatayef on a serving platter and drizzle the honey syrup over them. Garnish with chopped pistachios, if desired. Serve immediately.
