Chicken Malai Kebab popularly known as Reshmi Kebab is one of the Mughal Empire recipes. The word Reshmi means Silk, known for its smooth texture. And the word Malai indicates the use of milk cream which makes the kebab juicy inside and the grill makes the kebab crispy outside.
We love chicken for its protein content and tenderness. This starter is a juicy and tender kebab that turns into a mouth melting kebab dish.
When I tasted this Reshmi kebab I was so impressed with the cooking method that I was wondering how I can cook this in my kitchen and discovered an easy method that is so relevant to our times of cooking. It is a three step process. It's so fascinating to share this special Chicken Malai Kebab recipe with you all.

Ingredients
500 gm boneless chicken cubes
2 tbsp Cream/Malai
2 tbsp Hung Curd
1 tbsp Lemon Juice
1 tbsp Ginger garlic paste
½ tsp garam masala
1 tsp salt
½ tbsp black pepper
2 tbsp green coriander
2 green chillies
1 tbsp oil
1 tbsp Butter
1-2 Charcoal cube (optional)
4-6 Skewers
Method
Marination
Take a bowl, add the chicken cubes, lemon juice , and salt and keep aside for 30 minutes.
With the help of mixture make a paste of green coriander and green chillies by adding oil.
Now add other ingredients into the chicken step by step i.e., hung curd, cream, ginger garlic paste, garam masala, black pepper and paste of green chillies and coriander. and salt if required. And refrigerate for 2-3 hrs.
Then thread the chicken onto skewers.
Shallow Frying
Now take a grill pan/pan, add some oil and preheat for 10 minutes and place the skewers and grill it, in a medium flame. And cook for 15 minutes on each side. Brush the sides of chicken with butter.
Now take a cup, add hot charcoal and some butter over it and place it in the pan and close the lid and cook for 10 minutes on a medium flame.
Once you feel the aroma it's ready to be served.
Note: If you are using a grill pan no need to use charcoal cube.
