VEG BIRYANI

Vegetable Biryani originated in Persia and traveled to India through Mughals. In India vegetable biryani is widely loved and relished by all.

Vegetable biryani is prepared with basmati rice and lots of nutritious vegetables adding to that spicy masala gravy makes the dish Yummilicious.

I like to add double beans and peas a lot during the season as it adds a balanced fiber and protein to my diet. This type of preparation is cooked mostly in south Indian states.

I never opt for vegetable biryani outside. However, in most veg restaurants it is one of the must try dishes.

I enjoy making this recipe by myself and love to share it with you all. Hope you enjoy preparing it as well.


Ingredients

  • 500gm Basmati Rice

  • 2 medium sized onions

  • 2 medium sized tomatoes

  • ½ cup carrots

  • ½ cup beans

  • ½ cup peas

  • 2 medium sized potatoes

  • 1 tsp ginger garlic paste

  • 2 tsp Red chili

  • 1 tsp Garam masala

  • ½ tsp Zeera powder

  • 2 pcs Green Chili

  • Few Coriander leaves chopped

  • Few mint leaves chopped

  • ½ cup water

  • 1 cup oil


Method

  1. Take a large bowl, wash the rice twice with water and soak it in water for 20 minutes.

  2. Now take a large wide utensil and place it on a medium flame. Add oil and heat, once you see the bubbles in the oil add onions and stir until tender, then add ginger garlic paste and stir, add tomatoes and other vegetables. Stir it for 2 minutes until the vegetables get a shiny color.

  3. Now add the masala’s chili powder, garam masala, zeera powder and not the least salt. Stir them until they blend well with the vegetables.

  4. Later add water and cook it for 5-8 minutes before you turn off the stove, check whether the added veggies are tender. Once they are tender, turn off the stove.

  5. Now take a large utensil and add water double in quantity to that of rice and bring it to boil. Then add raw rice and cook until 80% of rice is perfectly cooked.

  6. Now add the rice into the cooked veggies masala gravy utensil and layer it, then place it on the stove on a medium flame.

  7. Then give a light stir with a flat spoon then close the utensil with a lid and let it steam cook for at least 10 minutes. Once you see the steam coming out of the utensil you can turn off the stove and serve.

Serve the hot Vegetable Biryani along with egg, raita and sweet that makes your south Indian meal complete.
